Mojo Aioli

Ingredients (Makes about 1 cup)

  • 1/2 cup mayonnaise (use a high-quality brand for best results)

  • 2 cloves garlic, minced

  • 2 tablespoons naranja agria (sour orange juice)

  • 2 tablespoons fresh lime juice (about 1/2 a lime)

  • 1/4 teaspoon ground cumin

  • 1 tablespoon olive oil (extra virgin, for richness)

  • Salt and pepper, to taste

  • Chopped parsley (optional, for garnish)

Instructions

  1. Prepare the Citrus Juice:

    • Measure out the naranja agria, lime juice, and lemon juice. Set aside.

  2. Make the Aioli Base:

    • In a medium bowl, combine the mayonnaise, minced garlic, naranja agria, and lime juice. Mix well until smooth.

  3. Add Spices:

    • Stir in the ground cumin . Mix until fully incorporated.

  4. Incorporate Olive Oil:

    • Slowly drizzle in the olive oil while whisking continuously to emulsify the mixture. This will give the aioli a rich, velvety texture.

  5. Season:

    • Taste the aioli and season with salt and pepper as needed. Adjust the citrus or spices to your preference.

  6. Chill and Serve:

    • Transfer the mojo aioli to a serving bowl or airtight container. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

    • Garnish with chopped cilantro or parsley before serving, if desired.
