Mojo Aioli
Ingredients (Makes about 1 cup)
1/2 cup mayonnaise (use a high-quality brand for best results)
2 cloves garlic, minced
2 tablespoons naranja agria (sour orange juice)
2 tablespoons fresh lime juice (about 1/2 a lime)
1/4 teaspoon ground cumin
1 tablespoon olive oil (extra virgin, for richness)
Salt and pepper, to taste
Chopped parsley (optional, for garnish)
Instructions
Prepare the Citrus Juice:
Measure out the naranja agria, lime juice, and lemon juice. Set aside.
Make the Aioli Base:
In a medium bowl, combine the mayonnaise, minced garlic, naranja agria, and lime juice. Mix well until smooth.
Add Spices:
Stir in the ground cumin . Mix until fully incorporated.
Incorporate Olive Oil:
Slowly drizzle in the olive oil while whisking continuously to emulsify the mixture. This will give the aioli a rich, velvety texture.
Season:
Taste the aioli and season with salt and pepper as needed. Adjust the citrus or spices to your preference.
Chill and Serve:
Transfer the mojo aioli to a serving bowl or airtight container. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Garnish with chopped cilantro or parsley before serving, if desired.
